Greek Salad-Inspired Quiche

Makes 6 servings
Ingredients
1 tablespoon olive oil
1 cup cherry tomatoes, halved
2/3 cup finely chopped green pepper
1/2 cup thinly sliced red onion
2/3 cup chopped fresh spinach
2 garlic cloves, minced
1 cup crumbled feta cheese
1/2 cup pitted Greek olives, sliced
6 large eggs – you can get them from CJ’s as well!!!!
1 cup CJ’s Fresh Raw Milk
1 tablespoon minced fresh oregano or 1 teaspoon dried oregano
1/2 teaspoon salt
1/8 to 3/4 teaspoon crushed red pepper flakes
Directions
Preheat oven to 190°c. In a 9-in. cast-iron or other ovenproof skillet, heat oil over medium-high heat. Add tomatoes, green peppers, and onion; cook and stir until vegetables are tender, 6-7 minutes; drain. Add spinach and garlic; cook and stir until spinach is wilted, 1-2 minutes. Remove from heat and stir in feta and olives.
In a large bowl, whisk eggs, milk, oregano, salt, and pepper flakes until blended. Pour over vegetables.
Bake until a knife inserted in centre comes out clean, 20-25 minutes. Let stand 10 minutes before serving.

Ingredients:
½ cup of Porridge Oats – we like Creamoata
1 Cup of CJ’s Fresh Raw Milk
Large Pinch of salt
Chelsea Brown Sugar, Golden Syrup, Berries……
Method:
Place ingredients in a small bowl and thoroughly mix – Place in the fridge overnight.
In the morning – Transfer to a sturdy pot, add salt to tasts, and gently heat to a simmer on the stove – if the porridge becomes too thick – add more CJ’s Fresh Raw Milk until the consistency you prefer.
Serve: Top with your desired toppings like fresh berries or keep it simple with a drizzle of golden syrup and a sprinkle of cinnamon or just smother it in Chelsea Brown sugar – pour on the Cream from the bottle of CJ’s Fresh Raw Milk, watch the porridge float – and ENJOY.
